Tender, juicy and so flavorful: Every bite of this easy meal prep recipe is simply sensational!

Ingredients you need for the 15 Minute Meal Prep Garlic Butter Steak with Zucchini Noodles

1 lb (450g) flank steak, sliced against the grain1/4 cup soy sauce (or coconut amino)Juice of 1/2 lemon1 tablespoon hot sauce of your choice (we used Sriracha)3 tablespoons butter, divided or (ghee for paleo diet)1/2 teaspoonred crushed chili pepper flakes, optional2 cloves garlic, minced1/2 cupchicken stockSalt and fresh crackedblack pepper, to taste1/3 cup fresh chopped parsley (or cilantro)4 spiralized zucchini (or a packet of zucchini noodles)

Directions

1.In a large bowl, combine soy sauce (or coconut amino), lemon juice, and hot sauce. Marinate the steak strips in this mixture for 10 minutes.

2.Melt 2 tablespoons butter in alarge skilletover medium-low heat.Cook the steak stripsfor 2 – 3 minutes on all sides, until browned. Remove to a clean plate and set aside.

3.In the same skillet melt the remaining tablespoon butter; then add lemon juice, chicken stock, minced garlic, parsley, red pepper flakes, and the remainings of the marinade. Cook for 3 or 4 minutes, stirring regularly until the sauce has reduced a bit. Adjust seasoning with salt and pepper if needed, and garnish with more parsley if you like.

4.Divide spiralized zucchininoodles into meal prep containers. Top withsteak stripsand garnish with lemon slices. Drizzle a littleof the sauce over the steak and zucchini noodles, or divide the sauce into small containers. Heat quickly in the microwave when ready to eat. This will cook the zucchini and reheat steak. Enjoy!
